Job Description:
Responsible for Food Quality, Food Safety, Sanitation, and Security, protecting food and establishing procedures and strategies to meet and exceed all regulatory, customer, and sanitation requirements of the bakery. Duties include: Manage the security, sanitation and quality activities of each department including the budgeting process, along with scheduling, training, processes and procedures.; Accountability for plant compliance including all food safety and regulatory requirements, including the inspection of all areas of the plant as well as the products and equipment for conformity to federal and state sanitation laws and plant standards.; Responsible to develop, train, and audit Sanitation Standard Operating Procedures (SSOP), including the preparation of the master sanitation schedule along with the coordination of all manufacturing activities; Design, implement and maintain the bakery pest control program; Responsible for developing and analyzing all Bakery KPI’s, producing reports that utilize bakery audits as a tool for plant performance improvement; Lead integration of the current quality assurance and food safety processes into one integrated process, including HACCP system, regulatory audits, quality systems review process (QSR), standard operating procedures (SOPs), incoming ingredient inspections, product scoring, food safety audits, field complaints, and standardized work instructions; Develop and maintain systems and plans to assure compliance to all SQF and SQF Level 2 requirements including commitment, document control and records, specifications, attaining food safety, verification, product identification trace and recall, incident management, food safety fundamentals (building and equipment design and construction), and food safety fundamentals (pre-requisite programs); Develop, train and maintain all records pertaining to critical food safety and quality requirements; Document and maintain training registry for all employees at the manufacturing site(s) will also be the responsibility of the Department Manager; Develop and maintain the HARPC Food Safety Program and Food Defense Program, meeting Regulatory Requirement; Lead investigations to determine and address root causes during special situations, quality failures, regulatory inspections, vendor (ingredient & packaging) related incidents, etc. to assure proper investigation, root cause analysis and resolution. This position supervises a Supervisor, 2 Quality, and Security Leads.
Minimum Requirements:
Master’s degree (or foreign equivalent) in Food Safety, Food Science or a closely related field. Required experience includes 2 years involving each of the following: Analysis of data for customer complaint resolution; Management experience in at least two of the following: Quality, Food Safety, Food Defense, and Sanitation and Security; Application of SQF, GMP, HACCP, and Food Safety principles; Master sanitation scheduling; and Scientific data analysis of Biological, Chemical and Physical hazards in a production setting.

Eric Uradzionek

Eric Uradzionek is a Production Supervisor at the Tennessee Bun Co. (part of The Bakery Cos. family), where he coordinates 3rd shift production activities baking hamburger buns for one of the company’s biggest customers.

 

Eric has been involved in the wholesale baking industry for the last 6 months and a member of ASB for the past year.   A personal hobby, and jobs at smaller retail/wholesale bakeries helped Eric figure out that a career in baking was right for him.  Eric joined ASB before his first major job in the wholesale baking industry because of the awesome learning resources and opportunities to network with experienced bakers in the industry. Preston Powell is an Account Executive at Grain Craft, where he manages and develops business with local and national accounts concerning bulk, bag and specialty flour products.

Monica Kline is Director of Business Operations and Education at The EnSol Group, a firm that delivers innovative engineering solutions to bakery and snack manufacturers.

 

Monica has been involved in the wholesale baking industry for the last 8 years and has been a member of ASB since she joined EnSol. After becoming employed in the industry, Monica chose to become a member of ASB because it was important to be connected to other industry professionals and to be able to use the many resources available to the Society’s members. Delia Justable

Delia Justable is a Global Sanitary Compliance Manager at Forbo Siegling LLC, where she is responsible for the development and implementation of Forbo’s food industry sanitary design and compliance program. She holds a Bachelor of Science in Agricultural Science/Food Science from Florida A&M University and a Master of Science in Food Science from Kansas State University. She is a certified HACCP practitioner, a certified SQF (Advanced) practitioner, and a certified Good Agricultural Practices (GAP) food safety trainer. Her prior work experiences include compliance and quality assurance management for bakery and produce operations.

 

Delia has been involved in the whole baking industry for 6 years and member of ASB for 2 years.  ASB BakingTech first attracted Delia to a career in baking.  After becoming employed in the industry, Delia chose to become a member of ASB due to the strategic important of the baking industry for Forbo Siegling LLC.  She continues to be involved in the society because it provides accredited sanitary design and compliance expertise to the baking industry. Given the strategic importance of the food industry, Forbo Siegling brought me onboard to facilitate discussions with our customers in regards to their sanitary design and compliance needs.

His high school job at Wheat Fields bakery in Lawrence, Kansas first attracted Harrison to a career in baking.  After becoming a student of Bakery Science at Kansas State University, Harrison chose to become a member of ASB because it was a good way to network within the industry and find a career after college. He continues to be involved in the society because he values the relationships and networking that ASB has provided him, and looks forward to a long and fulfilling career in the baking industry.
